A BIT OF DISNEY MAGIC AT HOME

Disney has been helping us enjoy some #DisneyMagicMoments while we're all staying home to stay safe. They've been releasing videos so you can virtually experience rides, see the new parade and watch their spectacular fireworks show. But we're most excited about the recipes that they're publishing. Nothing brings back a travel memory for us more than the smell or taste of food from a destination. Thankfully, three of my favourite treats from Disneyland can now be recreated at home!

Dole Whip Inspired Frozen Dessert

This refreshing frozen pinapple treat is best enjoyed while watching the show at Walt Disney's Enchanted Tiki Room. It's the perfect way to take a midafternoon break from the sun without having to leave the park. Here's how you can enjoy it at home with just 3 ingredients:


Disneyland Dolewhip

1 big scoop of vanilla ice cream

4 oz of pineapple juice

2 cups of frozen pineapple


Put all the ingredients into a blender and blend until smooth. Scoop into a bowl - or pipe with a pastry bag to get the swirl.This recipe makes 1 serving.








Mickey Mouse-shaped Beignets

This is hands down my favourite Disney snack! For me, nothing beats these warm, fluffy sugar coated pieces of heaven. Cafe Orleans often has seasonal versions but I always get an order of the original at least once during a visit to Disneyland. This recipe was just released by Disney and they note that it has been adapted from their larger quantity recipe so it may taste slightly different - still tasted great to us! You will be working with hot oil so please be sure to keep a close eye on any children that may be in the kitchen helping you.


Cafe Orleans Mickey Beignets

Ingredients: 11/2 teaspoon dry yeast 3/4 cup warm water (105°) 1/4 cup sugar 2 tablespoons vegetable shortening 1/2 teaspoon salt 1/2 cup heavy cream 1 egg 4 cups all-purpose flour 1/2 cup boiling water Vegetable oil for frying Powdered sugar


Directions: 1. Sprinkle yeast over warm water in a small bowl, stirring to dissolve. Let stand for 15 minutes. 2. Combine sugar, shortening, salt, heavy cream, egg, flour and boiling water in a large bowl; stir in yeast mixture. With the dough hook attachment of an electric mixer on medium speed, mix the dough just until combined and smooth. Let dough rest for 30 minutes. 3. Roll to 1/4-inch thickness and cut individual beignets with a Mickey Mouse-shaped cutter or cut into 2 1/2 to 3-inch squares. Cover with a towel and let dough rise until doubled in size in a warm, draft-free area, about 1 to 1 1/2 hours. 4. Using caution, heat 3 inches of vegetable oil to 350°F in a deep, heavy pot over medium-high heat. Fry beignets until golden brown, about 2 to 3 minutes, turning as soon as they brown on one side. Remove with tongs and place on paper towels to drain. Dust warm beignets with powdered sugar and serve immediately.




Monte Cristo Sandwich

It's tough to beat Disney's deep fried version of this classic sandwich, which started off as a lunch menu item at Blue Bayou. It's still on the Blue Bayou menu, but if you prefer to sit outside for lunch, head to Cafe Orleans where you can also order the Monte Cristo Sandwich. Note: this original Disney receipe involves deep frying; Pinterest some great baked versions that use crescent rolls pastry.

Batter

1 1/2 cups all purpose flour, sifted

1/4 tsp salt

1 tbsp baking powder

1 1/3 cups water

1 egg, beaten

Sift flour, salt and baking powder together. Add water to beaten egg and add to flour mixture and mix well. Set aside.


Sandwich

1 oz sliced white meat of turkey

1 oz sliced Swiss cheese

1 oz sliced ham

2 slices bread

Make a sandwich using first turkey, then Swiss cheese, then ham. Cut sandwich into quarters using toothpicks to hold the sandwich together. Dip sandwich in egg batter and fry in 360° oil until golden brown. Remove toothpicks and sprinkle with powdered sugar. Serve with raspberry or blackberry jam.
